Tomato and red lentil soup

Ingredients

  • 1 tablespoon olive oil
  • 2 ribs celery, small dice
  • 1 onion, small dice
  • 1 clove garlic, minced
  • 2 carrots, small dice
  • 1 green pepper, small dice
  • 1 cup red lentils, rinsed
  • 4 cups chicken stock
  • 1 teaspoon dried thyme
  • 1 28 oz pomi diced tomatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Heat the oil in large soup pot. Add the celery, onion and garlic. Sauté until onions are soft. Add the carrots and green pepper. Cook; stirring for 3 minutes.
  2. Add the lentils, chicken stock, thyme, tomatoes, salt and pepper.
  3. Cover and cook for 20 minutes.
